Au gratin

When cooking ‚au gratin‘ the fish is heated intensely from above. However, the fillets must be cooked beforehand. Afterwards, a thick sauce which can stick to the fish is poured on top and cooked au gratin under a salamander grill. The sauce has a special flavour when enriched with crabs, mushrooms or something similar.
