Make an adventure of grilling and rest assured your guests will give you the thumbs up. It is very important that the fish stays well cooled up until grilling. Ideally the fish is placed on ice in a bowl or in a cool box close to the grill.
The cooking time for whole fish amounts to 15 to 25 minutes, somewhat longer in aluminum foil. When the dorsal fins begin to detach and the meat is no longer glassy the fish is done. In order for fillets to keep their form the meat side is grilled first followed by the skin side. Fillets need on average 3 to 5 minutes each side.
