Seasoned marinades lend a particularly refined taste to fish. You can make them yourself or buy ready made. A delicious and simple mixture of lemon juice, native olive oil, finely chopped herbs e.g.smooth parsley, basil and tarragon and pressed garlic complements the flavour of the fish perfectly. Mix a thick marinade with these ingredients, brush onto the fish, leave to stand for up to 6 hours and place on a grill tray (pic. 1).
Exclusive for king prawns: A marinade is the non plus ultra for pre-grilled crustaceans. A coriander marinade, for example, is wonderfully exotic. Crustaceans should marinate for 1-6 hours. It is important that the oil is allowed to drip off after marinating to ensure that it does not drip into the glowing coals (pic. 2).

Ingredients:
6 tbls oil
½ bundle of coriander (chopped)
juice of 1 lime
1 pressed garlic clove
½ chopped chilli pepper without seeds
salt and pepper
