Anyone who has ever shelled a crab on the North Sea appreciates being served a crab which is ready to eat! To shell crabs, prawns or shrimps the body must be bent straight with the fingers - head to the left and tail to the right - until the hard shell breaks. The tail part is then separated jerkily from the body. The shell can then be removed and the meat from the crab and prawns eaten with the fingers. Even when finally the juices of the head are sucked out the rules of etiqutte remain unbroken!
